A scientific report published in the world's top plant science journal, Frontiers in Plant Science, found that temperature plays a significant role in the degradation of organic compounds.

They reported that storing organic compounds at room temperature (77°F) led to a decrease of 50% in potency content over the course of 1 year, making it the most unfavorable temperature when compared with refrigerator (39°F) and freezer temperatures (-4°F).

Terpenoid content, however, was also found to decrease by over 50% at freezer temperatures (-4°F), the largest terpene decrease out of any temperature condition. With these findings they were able to conclude that the most optimal postharvest temperature conditions for organic compound and terpene preservation is at refrigerator temperatures (39°F).

Air exposure enables harmful atmospheric oxidation of cannabinoids and terpenes to take place. Scientists at the Swedish National Forensic Centre concluded that the method used for organic goods storage has a very strong effect on organic compound composition. They reported with a 99% confidence level that organic compounds stored at -4°F in a dark freezer with no air exposure for 4 years showed zero degradation.

These numbers show air exposure alone can still account for a 32% decrease in potency and flavor.
